Sausage and Tomato Drop Biscuits

Ingredients

  • ¾ cup all-purpose flour
  • ¼ cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup cold fat-free buttermilk
  • 2 Tbsp butter, melted
  • ½ cup shredded 75% reduced-fat Cheddar cheese
  • ½ lb lean turkey breakfast sausage, cut into 6 slices
  • 1 large tomato, cut into 6 slices

Instructions

  1. Preheat oven to 450°F. Line a baking sheet with parchment paper.
  2. Whisk together both flours, baking powder, sugar, baking soda, and salt in a large bowl.
  3. Add buttermilk and butter; stir just until moistened. Gently stir in cheese. Drop dough onto baking sheet in 6 (¼-cup) mounds.
  4. Bake 10 minutes or until lightly golden.
  5. Meanwhile, cook sausage according to package directions.
  6. Cut biscuits in half horizontally. Top bottom halves with sausage and tomatoes; cover with biscuit tops.
