Sheet Pan Greek Meatballs

Ingredients
- ½ cup chopped almonds or walnuts
- 6 Tbsp capers
- 2 Tbsp paprika
- 1 Tbsp salt-free Greek seasoning
- 1 Tbsp lemon zest
- ¼ tsp salt
- 2 large eggs, lightly beaten
- 1½ cups panko breadcrumbs
- 2 lb lean ground beef (or use ground chicken)
Instructions
- Preheat oven to 425°F. Combine nuts, capers, paprika, seasoning, lemon zest, and salt. Whisk in eggs. Add panko and beef; gently mix together using your hands.
- Roll beef mixture into 1½-inch meatballs. Place on two greased rimmed baking sheets.
- Bake 10 to 15 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes.
Side Dish Ingredients
- 1½ cups whole wheat orzo
- 2 Tbsp olive oil, divided
- 2 Tbsp lemon juice
- 1 tsp Italian seasoning
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 3 (12-oz) pkg thin green beans
Side Dish Instructions
- Cook orzo according to package directions. Stir in 1 Tbsp oil, lemon juice, Italian seasoning, and ½ tsp each salt and pepper.
- Cook beans according to package directions. Stir in 1 Tbsp oil and ¼ tsp each salt and pepper.
