Ingredients

  • ½ cup chopped almonds or walnuts
  • 6 Tbsp capers
  • 2 Tbsp paprika
  • 1 Tbsp salt-free Greek seasoning
  • 1 Tbsp lemon zest
  • ¼ tsp salt
  • 2 large eggs, lightly beaten
  • 1½ cups panko breadcrumbs
  • 2 lb lean ground beef (or use ground chicken)

Instructions

  1. Preheat oven to 425°F. Combine nuts, capers, paprika, seasoning, lemon zest, and salt. Whisk in eggs. Add panko and beef; gently mix together using your hands.
  2. Roll beef mixture into 1½-inch meatballs. Place on two greased rimmed baking sheets.
  3. Bake 10 to 15 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes.

  • 1½ cups whole wheat orzo
  • 2 Tbsp olive oil, divided
  • 2 Tbsp lemon juice
  • 1 tsp Italian seasoning
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 3 (12-oz) pkg thin green beans

Side Dish Instructions

  1. Cook orzo according to package directions. Stir in 1 Tbsp oil, lemon juice, Italian seasoning, and ½ tsp each salt and pepper.
  2. Cook beans according to package directions. Stir in 1 Tbsp oil and ¼ tsp each salt and pepper.
