Parmesan-Almond Flounder

Spinach-and-Feta Farro Salad

Ingredients

  • 6 (6-oz) flounder fillets (or use grouper)
  • ½ cup freshly grated Parmesan cheese
  • ½ cup chopped almonds
  • 3 Tbsp mayonnaise
  • 1 Tbsp butter, softened

Instructions

  1. Preheat broiler. Pat fish dry with a paper towel; arrange fish on a greased broiler rack.
  2. Stir together cheese, nuts, mayonnaise, and butter in a small bowl; spread over fish. Sprinkle with salt and pepper, if desired.
  3. Broil 8 to 10 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1½ cups quick-cooking farro
  • 1 (5-oz) pkg baby spinach
  • ½ cup crumbled feta cheese
  • ½ cup lemon vinaigrette
  • 2 tsp dried dill

Side Dish Instructions

  1. Cook farro according to package directions. Drain and place in a bowl; stir in spinach to wilt.
  2. Add cheese, vinaigrette, and dill to bowl; toss.
