Parmesan-Almond Flounder
Spinach-and-Feta Farro SaladIngredients
- 6 (6-oz) flounder fillets (or use grouper)
- ½ cup freshly grated Parmesan cheese
- ½ cup chopped almonds
- 3 Tbsp mayonnaise
- 1 Tbsp butter, softened
Instructions
- Preheat broiler. Pat fish dry with a paper towel; arrange fish on a greased broiler rack.
- Stir together cheese, nuts, mayonnaise, and butter in a small bowl; spread over fish. Sprinkle with salt and pepper, if desired.
- Broil 8 to 10 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 1½ cups quick-cooking farro
- 1 (5-oz) pkg baby spinach
- ½ cup crumbled feta cheese
- ½ cup lemon vinaigrette
- 2 tsp dried dill
Side Dish Instructions
- Cook farro according to package directions. Drain and place in a bowl; stir in spinach to wilt.
- Add cheese, vinaigrette, and dill to bowl; toss.
