Easy Caesar Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 (5-oz) pkg Caesar croutons, crushed
  • ½ cup grated Parmesan cheese
  • ¾ cup creamy Caesar dressing

Instructions

  1. Preheat oven to 425°F. Cut each chicken breast in half crosswise, and pound to ½-inch-thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Stir together crushed croutons and cheese in a shallow bowl.
  3. Dip chicken in ¾ cup dressing in a shallow bowl; dredge in crouton crumbs, pressing gently to coat. Place on a lightly greased baking sheet.
  4. Bake 20 minutes or until chicken is browned and done. Drizzle with additional dressing, if desired.

Side Dish Ingredients

  • 2 (8.8-oz) pouches microwavable butter and garlic rice
  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp butter

Side Dish Instructions

  1. Microwave rice according to package directions.
  2. Cook broccoli according to package directions; place in a bowl, and stir in butter until melted. Season with salt and pepper to taste.
