Honey-Apricot Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ½ cup apricot preserves
  • 3 Tbsp honey
  • ½ tsp dried thyme

Instructions

  1. Pound chicken to an even thickness using the heel of your hand or a meat mallet. Sprinkle chicken with salt and pepper.
  2. Cook chicken in hot oil in a large skillet over medium-high heat 5 to 6 minutes per side.
  3. Stir together preserves, honey, and thyme. Add to skillet, reduce heat to medium, and cook 3 to 4 minutes or until thickened, turning to coat chicken.

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 1 (12-oz) pkg frozen broccoli florets
  • 2 Tbsp minced garlic
  • 1 Tbsp olive oil
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp honey

Side Dish Instructions

  1. Cook rice and broccoli according to package directions.
  2. Meanwhile, cook garlic in hot oil in a large skillet over medium-high heat 1 to 2 minutes or until fragrant. Reduce heat to medium; add soy sauce and honey, stirring to combine.
  3. Add broccoli, tossing to coat. Cook until thoroughly heated.
