Tomato Butter Chicken

Ingredients

  • 6 tomatoes, chopped
  • 3 Tbsp olive oil, divided
  • 2 Tbsp minced garlic
  • 1½ tsp Italian seasoning
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 1½ lb boneless, skinless chicken thighs
  • 6 Tbsp butter
  • ½ cup low-sodium chicken broth

Instructions

  1. Stir together tomatoes, 2 Tbsp oil, garlic, Italian seasoning, and ½ tsp each salt and pepper. Set aside.
  2. Sprinkle chicken with ¼ tsp each salt and pepper. Cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes per side or until done. Remove from skillet; keep warm.
  3. Melt butter in same skillet over medium heat. Add tomato mixture and broth to skillet; cook 3 minutes or until thickened. Serve sauce with chicken.

  • 1 (12-oz) pkg frozen green beans
  • ½ (14-oz) loaf French bread

Side Dish Instructions

  1. Preheat broiler. Cook green beans according to package directions.
  2. Cut bread in half lengthwise; place on a baking sheet. Broil 2 to 3 minutes or until toasted.
