Tomato Butter Chicken
Green Beans and Toasted French BreadIngredients
- 6 tomatoes, chopped
- 3 Tbsp olive oil, divided
- 2 Tbsp minced garlic
- 1½ tsp Italian seasoning
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 1½ lb boneless, skinless chicken thighs
- 6 Tbsp butter
- ½ cup low-sodium chicken broth
Instructions
- Stir together tomatoes, 2 Tbsp oil, garlic, Italian seasoning, and ½ tsp each salt and pepper. Set aside.
- Sprinkle chicken with ¼ tsp each salt and pepper. Cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes per side or until done. Remove from skillet; keep warm.
- Melt butter in same skillet over medium heat. Add tomato mixture and broth to skillet; cook 3 minutes or until thickened. Serve sauce with chicken.

- 1 (12-oz) pkg frozen green beans
- ½ (14-oz) loaf French bread
Side Dish Instructions
- Preheat broiler. Cook green beans according to package directions.
- Cut bread in half lengthwise; place on a baking sheet. Broil 2 to 3 minutes or until toasted.
