Sausage-Gnocchi Soup
Baby Spinach Salad
Ingredients
- 1 (16-oz) pkg ground Italian turkey sausage
- 1 cup chopped onion
- 1 Tbsp Italian seasoning
- 2 Tbsp olive oil
- 3 cups water
- 1¾ cups low-sodium chicken broth
- 1 (14.5-oz) can Italian-style diced tomatoes
- 1 (16-oz) pkg potato gnocchi
- ⅓ cup freshly shredded Parmesan cheese
Instructions
- Cook sausage, onion, and seasoning in hot oil in a large Dutch oven over medium-high heat until sausage is browned and crumbly. Add water, broth, and tomatoes; bring to a boil. Season with salt and pepper, if desired.
- Add gnocchi. Cook 5 to 6 minutes or until gnocchi is done. If desired, garnish each serving with about ¼ cup Baby Spinach Salad recipe. Serve remaining salad on the side. Sprinkle each serving with cheese.
Side Dish Ingredients
- 1 (5-oz) pkg baby spinach
- ⅓ cup balsamic vinaigrette
- ½ tsp pepper
Side Dish Instructions
- Toss together ingredients in a large bowl.
