Sausage-Gnocchi Soup

Ingredients

  • 1 (16-oz) pkg ground Italian turkey sausage
  • 1 cup chopped onion
  • 1 Tbsp Italian seasoning
  • 2 Tbsp olive oil
  • 3 cups water
  • 1¾ cups low-sodium chicken broth
  • 1 (14.5-oz) can Italian-style diced tomatoes
  • 1 (16-oz) pkg potato gnocchi
  • ⅓ cup freshly shredded Parmesan cheese

Instructions

  1. Cook sausage, onion, and seasoning in hot oil in a large Dutch oven over medium-high heat until sausage is browned and crumbly. Add water, broth, and tomatoes; bring to a boil. Season with salt and pepper, if desired.
  2. Add gnocchi. Cook 5 to 6 minutes or until gnocchi is done. If desired, garnish each serving with about ¼ cup Baby Spinach Salad recipe. Serve remaining salad on the side. Sprinkle each serving with cheese.

Side Dish Ingredients

  • 1 (5-oz) pkg baby spinach
  • ⅓ cup balsamic vinaigrette
  • ½ tsp pepper

Side Dish Instructions

  1. Toss together ingredients in a large bowl.
