Greek Kofta Bowls

Ingredients
- 2 lb plant-based ground beef
- 1 Tbsp salt-free Greek seasoning
- 3 cloves garlic, minced
- 1 (20-oz) pkg frozen riced cauliflower
- 1 Tbsp olive oil
- ¼ tsp kosher salt
- ¼ tsp pepper
- 1 (5-oz) pkg baby spinach
- 1 pint grape tomatoes, halved
- 1½ cups tzatziki dip
Instructions
- Preheat oven to 400°F. Combine plant-based beef, Greek seasoning, and garlic; shape into 12 oblong meatballs.
- Place meatballs on a lightly greased foil-lined rimmed baking sheet. Bake 12 to 15 minutes or until meatballs are done, turning after 7 minutes.
- Meanwhile, cook cauliflower according to package directions; stir in oil, salt, and pepper.
- Divide cauliflower and spinach among 6 shallow bowls. Top with meatballs and tomatoes. Serve with tzatziki.
