Greek Kofta Bowls

Ingredients

  • 2 lb plant-based ground beef
  • 1 Tbsp salt-free Greek seasoning
  • 3 cloves garlic, minced
  • 1 (20-oz) pkg frozen riced cauliflower
  • 1 Tbsp olive oil
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 1 (5-oz) pkg baby spinach
  • 1 pint grape tomatoes, halved
  • 1½ cups tzatziki dip

Instructions

  1. Preheat oven to 400°F. Combine plant-based beef, Greek seasoning, and garlic; shape into 12 oblong meatballs.
  2. Place meatballs on a lightly greased foil-lined rimmed baking sheet. Bake 12 to 15 minutes or until meatballs are done, turning after 7 minutes.
  3. Meanwhile, cook cauliflower according to package directions; stir in oil, salt, and pepper.
  4. Divide cauliflower and spinach among 6 shallow bowls. Top with meatballs and tomatoes. Serve with tzatziki.
