Easy Oven Salmon
Pecan-Goat Cheese Carrots
Ingredients
- 6 (6-oz) salmon fillets
- ½ tsp dried crushed rosemary (or use fresh rosemary)
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 425°F. Place fish on a foil-lined rimmed baking sheet lightly coated with cooking spray. Sprinkle with rosemary, salt, and pepper. Bake 15 minutes or until fish flakes with a fork.

- 2 Tbsp butter
- 2 lb carrots, sliced
- ½ tsp salt
- ½ cup chopped pecans
- 3 Tbsp maple syrup
- 1 Tbsp brown sugar
- 1 (4-oz) pkg crumbled goat cheese
Side Dish Instructions
- Melt butter in a large skillet over medium-high heat. Add carrots and salt; cook 8 minutes or until lightly browned.
- Add nuts, syrup, and sugar, stirring to coat. Cook 3 minutes or until nuts are fragrant and carrots are tender. Sprinkle with cheese.
