Ground Beef Ratatouille

Ingredients

  • 2 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 3 cups diced eggplant
  • 1 Tbsp Italian seasoning (or use dried basil or thyme)
  • 1 bell pepper, chopped (red or green)
  • 4 Roma tomatoes, seeded and chopped
  • 1 (5-oz) pkg baby spinach, chopped
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Cook beef, onion, and garlic in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until beef is browned and crumbly.
  2. Add eggplant and Italian seasoning; cook 5 minutes. Stir in bell pepper, tomatoes, spinach, salt, and pepper. Cook 10 minutes or until vegetables are tender.

Side Dish Ingredients

  • 1 (20-oz) pkg frozen mashed cauliflower
  • ¾ cup shredded sharp Cheddar cheese
  • 2 green onions, chopped
  • 1 Tbsp butter

Side Dish Instructions

  1. Microwave cauliflower according to package directions. Stir in cheese, onions, and butter.
