Ground Beef Ratatouille
Cheesy Cauliflower Mash
Ingredients
- 2 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 3 cups diced eggplant
- 1 Tbsp Italian seasoning (or use dried basil or thyme)
- 1 bell pepper, chopped (red or green)
- 4 Roma tomatoes, seeded and chopped
- 1 (5-oz) pkg baby spinach, chopped
- 1 tsp salt
- ½ tsp pepper
Instructions
- Cook beef, onion, and garlic in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until beef is browned and crumbly.
- Add eggplant and Italian seasoning; cook 5 minutes. Stir in bell pepper, tomatoes, spinach, salt, and pepper. Cook 10 minutes or until vegetables are tender.
Side Dish Ingredients
- 1 (20-oz) pkg frozen mashed cauliflower
- ¾ cup shredded sharp Cheddar cheese
- 2 green onions, chopped
- 1 Tbsp butter
Side Dish Instructions
- Microwave cauliflower according to package directions. Stir in cheese, onions, and butter.
