Green Goddess Chicken Thighs

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ¾ cup green goddess dressing

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
  2. Reduce heat to medium. Stir in dressing; cook 2 minutes or until thoroughly heated, turning to coat chicken.

Side Dish Ingredients

  • 1 (10-oz) pkg mixed baby greens
  • ½ cup thinly sliced red onion
  • ⅓ cup pomegranate seeds (arils)
  • ⅔ cup balsamic vinaigrette
  • ½ cup crumbled goat cheese

Side Dish Instructions

  1. Toss together greens, onion, and pomegranate seeds in a bowl. Drizzle with dressing; toss. Sprinkle with cheese.
