Peanut-Lime Chicken

Ingredients

  • 6 Tbsp vegetable oil, divided
  • ¼ cup no-sugar-added peanut butter
  • 2½ Tbsp lime juice
  • 2 Tbsp granulated erythritol brown sugar substitute
  • 2 Tbsp low-sodium soy sauce
  • ¼ tsp ground ginger
  • 2 cloves garlic, minced
  • 2 lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Whisk together ¼ cup oil, peanut butter, lime juice, sugar substitute, soy sauce, ginger, and garlic in a small bowl.
  2. Pound chicken to an even thickness with the heel of your hand or a meat mallet. Sprinkle chicken with salt and pepper; cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
  3. Stir in peanut butter sauce; cook 2 to 3 minutes or until thoroughly heated, turning to coat chicken.

  • 1 lb green beans, trimmed
  • 3 Tbsp olive oil, divided
  • 1 tsp garlic salt
  • 2 (10-oz) pkg frozen riced cauliflower
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp lime juice
  • ½ tsp kosher salt

Side Dish Instructions

  1. Preheat oven to 400°F. Toss green beans, 2 Tbsp oil, and garlic salt on a rimmed baking sheet.
  2. Bake 15 minutes, stirring once after 10 minutes.
  3. Heat 1 Tbsp oil in a large skillet over medium heat. Add cauliflower; cook 6 minutes or until thawed and thoroughly heated, stirring often. Stir in cilantro, lime juice, and salt.
