Sautéed Mushrooms with Spinach

Ingredients

  • 2 lb ground beef
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • ½ tsp garlic powder
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp chopped fresh parsley
  • ½ cup sliced mushrooms, chopped
  • ½ onion, chopped
  • ½ green bell pepper, chopped
  • 6 (1-oz) slices sharp Cheddar cheese

Instructions

  1. Preheat grill to medium-high heat. Combine beef, salt, pepper, garlic powder, and soy sauce. Shape mixture into 12 thin patties.
  2. Combine parsley, mushrooms, onion, and bell pepper; divide mixture among 6 patties. Top each with another patty; seal edges to enclose mushroom mixture.
  3. Grill, covered, 5 minutes per side or until meat is no longer pink. Top with cheese; grill 1 to 2 minutes longer until cheese melts.

Side Dish Ingredients

  • 2 Tbsp butter
  • 1 Tbsp olive oil
  • 1 onion, thinly sliced
  • 2 (8-oz) pkg sliced mushrooms
  • 2 (5-oz) pkg baby spinach
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Melt butter and oil in a large skillet over medium-high heat. Add onion to skillet; sauté 2 minutes. Add mushrooms; sauté 5 minutes.
  2. Stir in spinach, and cook 2 minutes or until wilted; sprinkle with salt and pepper.
