Stuffed Cheeseburgers
Sautéed Mushrooms with SpinachIngredients
- 2 lb ground beef
- ½ tsp kosher salt
- ¼ tsp pepper
- ½ tsp garlic powder
- 2 Tbsp low-sodium soy sauce
- 2 Tbsp chopped fresh parsley
- ½ cup sliced mushrooms, chopped
- ½ onion, chopped
- ½ green bell pepper, chopped
- 6 (1-oz) slices sharp Cheddar cheese
Instructions
- Preheat grill to medium-high heat. Combine beef, salt, pepper, garlic powder, and soy sauce. Shape mixture into 12 thin patties.
- Combine parsley, mushrooms, onion, and bell pepper; divide mixture among 6 patties. Top each with another patty; seal edges to enclose mushroom mixture.
- Grill, covered, 5 minutes per side or until meat is no longer pink. Top with cheese; grill 1 to 2 minutes longer until cheese melts.

- 2 Tbsp butter
- 1 Tbsp olive oil
- 1 onion, thinly sliced
- 2 (8-oz) pkg sliced mushrooms
- 2 (5-oz) pkg baby spinach
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Melt butter and oil in a large skillet over medium-high heat. Add onion to skillet; sauté 2 minutes. Add mushrooms; sauté 5 minutes.
- Stir in spinach, and cook 2 minutes or until wilted; sprinkle with salt and pepper.
