Baked Flounder Provencal Packets

Quick Parmesan Asparagus

Ingredients

  • 3 (6-oz) flounder fillets
  • 1½ Tbsp olive oil
  • ¼ tsp pepper
  • ⅛ tsp salt
  • 2 small Roma tomatoes, chopped
  • ½ onion, thinly sliced
  • ¼ cup chopped pitted kalamata olives
  • 3 Tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 425°F. Place each fillet on a 12- x 15-inch sheet of greased foil; drizzle with oil, and sprinkle with pepper and salt.
  2. Divide remaining ingredients among packets. Fold foil, and seal tightly to make packets. Place packets on a rimmed baking sheet.
  3. Bake 10 to 12 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1 lb asparagus, trimmed
  • ½ cup water
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp freshly grated Parmesan cheese 

Side Dish Instructions

  1. Place asparagus and water in a shallow microwave-safe dish; cover with plastic wrap, and vent corner. Microwave at HIGH 2 minutes or until crisp-tender; drain.
  2. Drizzle asparagus with vinegar; sprinkle with cheese.
