Sage and Gruyère Meatballs

Ingredients
- ¼ lb ground chicken
- ¼ lb ground Italian pork sausage
- ⅓ cup panko breadcrumbs
- 2 tsp minced garlic
- ¼ tsp dried rubbed sage
- 1 large egg yolk, lightly beaten
- 1 Tbsp olive oil
- ⅓ cup shredded Gruyère cheese (or use provolone)
Instructions
- Preheat broiler. Gently mix together chicken, sausage, breadcrumbs, garlic, sage, and egg yolk using your hands. Roll chicken mixture into 1½-inch balls.
- Cook meatballs in hot oil in a large cast-iron skillet over medium-high heat 7 minutes or until browned and no longer pink in centers. Sprinkle with cheese.
- Broil 2 to 3 minutes or until cheese melts and is lightly browned.

- 4 oz whole-grain spaghetti
- ⅓ cup low-sodium chicken broth
- 3 Tbsp heavy cream
- ¼ tsp dried rubbed sage
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 cups spinach
Side Dish Instructions
- Cook spaghetti according to package directions.
- Combine broth, cream, sage, salt, and pepper in a saucepan over medium heat 8 minutes or until thickened. Stir in spinach until wilted.
- Toss together pasta and spinach mixture.
