Maple-Herb Pork Chops

Chive Baked Potatoes and Green Beans

Ingredients

  • 3 Tbsp maple syrup
  • 3 Tbsp chopped fresh chives
  • 1½ Tbsp apple cider vinegar
  • 1 Tbsp Dijon mustard
  • 3 cloves garlic, minced
  • 6 (6-oz) boneless pork loin chops
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Tbsp olive oil

Instructions

  1. Whisk together syrup, chives, vinegar, mustard, and garlic. Brush syrup mixture on both sides of pork. Sprinkle with salt and pepper.
  2. Cook pork in hot oil in a large skillet over medium-high heat 5 to 7 minutes per side or until done.

Side Dish Ingredients

  • 6 small russet potatoes
  • 3 Tbsp butter
  • 3 Tbsp chopped fresh chives
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 6 Tbsp plain whole-milk yogurt
  • 2 (12-oz) pkg green beans

Side Dish Instructions

  1. Prick each potato several times with a fork. Microwave at HIGH 5 minutes, and turn potatoes. Microwave 5 to 10 minutes longer or until potatoes are tender.
  2. Cut a lengthwise slit in each potato. Top with butter, chives, ½ tsp each salt and pepper, and yogurt.
  3. Meanwhile, cook beans according to package directions. Sprinkle with ¼ tsp each salt and pepper.
