Cranberry-Walnut Spinach Salad

Ingredients

  • 1 (13.8-oz) pkg refrigerated pizza crust
  • 1 onion, diced
  • 3 Tbsp olive oil, divided
  • 1 Tbsp minced garlic
  • 1 cup whole-milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 Tbsp everything bagel seasoning

Instructions

  1. Preheat oven to 425°F. Press dough into a 13- x 9-inch greased baking dish or a 12-inch greased pizza pan. Prick surface several times with a fork. Bake 6 minutes.
  2. Meanwhile, cook onion in 1 Tbsp hot oil over medium-high heat 6 minutes. Add garlic; cook 1 minute or until garlic is fragrant and onion is browned and tender.
  3. Brush 2 Tbsp oil on prebaked crust. Dollop with ricotta, spreading in an even layer. Top with onion mixture, mozzarella, and seasoning.
  4. Bake 8 to 10 minutes or until crust is browned and cheese melts.

Side Dish Ingredients

  • 1 (10-oz) pkg spinach
  • ½ cup chopped walnuts
  • ½ cup dried cranberries
  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
