Tomato-Basil Pork Chops
Steamed Green BeansIngredients
- 1¼ lb bone-in pork chops
- 1 Roma tomato, diced
- 1 clove garlic, minced
- 1 (0.5-oz) pkg fresh basil, chopped
- ½ (8-oz) pkg small fresh mozzarella cheese balls (ciliegini), halved
- 1 Tbsp balsamic vinegar
- 1 Tbsp olive oil
Instructions
- Preheat grill or grill pan to medium-high heat. Season pork chops lightly with salt and pepper. Grill pork, covered, 5 to 6 minutes per side or to desired doneness.
- Stir together tomatoes, garlic, basil, cheese, vinegar, and oil; season lightly with salt and pepper. Spoon tomato mixture over pork.
