Mushroom-Onion Smothered Steaks
Cauliflower Mash and Garlic BroccoliniIngredients
- 2½ lb beef round steak, cut into serving-size pieces
- 1 onion, thinly sliced
- 1 (16-oz) pkg whole mushrooms, sliced
- 2 cups organic chicken broth
- 3 Tbsp tomato paste
- 1 Tbsp coconut aminos
- 2 tsp dried thyme
- 2 Tbsp ghee, melted
- 2 Tbsp tapioca flour
Instructions
- Place steak, onion, and mushrooms in a 5- to 7-quart slow cooker. Whisk together broth, tomato paste, coconut aminos, and thyme; add to cooker. Cover and cook on LOW 8 to 10 hours or until steak is tender.
- Whisk together ghee and flour in a bowl; add 1 cup hot liquid from cooker. Whisk until smooth. Add to cooker; increase heat to HIGH. Cook, uncovered, 30 minutes or until sauce is thickened.
Side Dish Ingredients
- 2 small heads cauliflower, cut into florets
- 6 Tbsp avocado oil, divided
- 3 cloves garlic, minced
- 2 bunches Broccolini (or use broccoli florets)
Side Dish Instructions
- Steam cauliflower in a steamer basket over boiling water 12 to 15 minutes or until tender.
- Carefully transfer cauliflower to a food processor. Add ¼ cup oil in a steady stream, pulsing until smooth, scraping sides as needed. Season with salt and pepper to taste.
- Meanwhile, sauté garlic in 2 Tbsp hot oil in a large skillet 30 seconds. Add Broccolini; sauté 5 minutes or until crisp-tender. Season with salt and pepper to taste.
