Garlic-Roasted Asparagus

Ingredients

  • 2 (6-oz) cod fillets, patted dry (or use flounder)
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 1 Tbsp plus 1 tsp olive oil, divided
  • ½ small red bell pepper, chopped
  • ¾ cup cherry tomatoes, halved
  • ¼ cup pitted kalamata olives, coarsely chopped
  • 1 clove garlic, minced
  • 2 Tbsp chopped fresh basil

Instructions

  1. Sprinkle fish with salt and pepper. Cook fish in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until fish flakes with a fork. Remove from skillet.
  2. Cook bell pepper in 1 tsp hot oil in skillet over medium heat 2 minutes or until tender, stirring occasionally.
  3. Stir in tomatoes and olives; cook 3 to 4 minutes or until tomatoes begin to burst, stirring often. Stir in garlic and basil. Serve tomato mixture over fish.

  • ¾ lb asparagus, trimmed
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 clove garlic, minced

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
  2. Bake 10 to 15 minutes or until asparagus is browned and tender.
