Mediterranean Cod
Garlic-Roasted Asparagus
Ingredients
- 2 (6-oz) cod fillets, patted dry (or use flounder)
- ¼ tsp kosher salt
- ¼ tsp pepper
- 1 Tbsp plus 1 tsp olive oil, divided
- ½ small red bell pepper, chopped
- ¾ cup cherry tomatoes, halved
- ¼ cup pitted kalamata olives, coarsely chopped
- 1 clove garlic, minced
- 2 Tbsp chopped fresh basil
Instructions
- Sprinkle fish with salt and pepper. Cook fish in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or until fish flakes with a fork. Remove from skillet.
- Cook bell pepper in 1 tsp hot oil in skillet over medium heat 2 minutes or until tender, stirring occasionally.
- Stir in tomatoes and olives; cook 3 to 4 minutes or until tomatoes begin to burst, stirring often. Stir in garlic and basil. Serve tomato mixture over fish.

- ¾ lb asparagus, trimmed
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 1 clove garlic, minced
Side Dish Instructions
- Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
- Bake 10 to 15 minutes or until asparagus is browned and tender.
