Ingredients

  • 1 lb plant-based ground beef
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (24-oz) jar tomato and basil marinara sauce
  • 1 (32-oz) carton low-sodium vegetable broth
  • 1 (12-oz) pkg three-cheese tortellini
  • 2 Tbsp chopped fresh basil
  • Freshly grated Parmesan cheese (optional)

Instructions

  1. Cook plant-based beef, onion, and garlic in hot oil in a large deep skillet over medium heat until beef is browned and crumbly.
  2. Stir in marinara sauce, broth, and tortellini; bring to a boil, cover, reduce heat, and simmer 12 minutes or until tortellini is tender. Sprinkle with basil and, if desired, cheese.
