Shrimp Pesto Pasta

Ingredients

  • 4 oz cavatappi pasta (1⅓ cups)
  • 1½ tsp butter
  • ½ lb peeled and deveined, large raw shrimp
  • ½ (12-oz) pkg broccoli florets, coarsely chopped
  • ⅓ cup low-sodium chicken broth
  • ¼ cup pesto
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; set aside.
  2. Melt butter in a skillet over medium heat; add shrimp. Cook, stirring occasionally, 3 to 4 minutes or until shrimp turn pink. Remove from skillet.
  3. Stir in broccoli and broth; cover and cook 2 minutes or until broccoli is crisp-tender.
  4. Stir in pesto, and cook until thoroughly heated. Add shrimp, hot cooked pasta, and cheese; toss.
