Street Corn and Chicken Casserole

Ingredients

  • 3 cups shredded rotisserie chicken
  • 2 (12-oz) pkg frozen corn kernels, thawed
  • 1¼ cups crumbled queso fresco, divided
  • ½ cup chopped red bell pepper
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 tsp chili powder
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ cup chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 350°F. Combine chicken, corn, ¾ cup queso fresco, bell pepper, mayonnaise, sour cream, chili powder, garlic powder, and salt in a greased 2-quart baking dish.
  2. Bake 30 to 35 minutes or until thoroughly heated and bubbly. Sprinkle with ½ cup queso fresco and, if desired, cilantro.
