Classic Red Beans and Rice

Ingredients

  • 1 (16-oz) pkg dried red kidney beans
  • 1 (14-oz) pkg smoked andouille sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cups chopped celery
  • 2 cups water
  • 2 Tbsp Creole seasoning
  • 4 cloves garlic, minced
  • 1 (32-oz) carton gluten-free chicken broth
  • 2 green onions, sliced

Instructions

  1. Soak, sort, and rinse beans according to package directions (see Note). Drain the beans. Add beans and water to cover to a large saucepan; bring to a boil, and cook at least 10 minutes.
  2. Place beans in a 5- to 7-quart slow cooker. Add sausage and next 7 ingredients.
  3. Cover and cook on LOW 8 to 10 hours or until beans are tender. Serve beans over Steamed Rice recipe. Sprinkle with green onions.

Side Dish Ingredients

  • 1½ cups long-grain white rice

Side Dish Instructions

  1. Cook rice according to package directions.
