Linguine with Clams

Crispy Prosciutto Arugula Salad

Ingredients

  • 1 (12-oz) pkg gluten-free linguine (or use spaghetti)
  • 2 (10-oz) cans wild-caught baby clams (or use 3 [6.5-oz] cans chopped wild-caught clams)
  • 1 cup white wine (or use gluten-free chicken broth)
  • 3 Tbsp chopped fresh flat-leaf parsley
  • 6 Tbsp freshly grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, drain clams, reserving 1 cup juice. Add reserved clam juice and wine to a large skillet. Bring to a simmer; cook 5 minutes or until reduced to 1½ cups.
  3. Add clams, parsley, and pasta; toss. Sprinkle with cheese.

Side Dish Ingredients

  • 2 oz sliced prosciutto (about 4 slices)
  • ⅓ cup olive oil vinaigrette
  • 1 Tbsp honey
  • 1 (5-oz) pkg baby arugula

Side Dish Instructions

  1. Arrange prosciutto on a microwave-safe plate lined with paper towels; cover with additional paper towels. Microwave at HIGH 1 minute.
  2. Immediately remove prosciutto from plate, discarding paper towels. Cool 1 minute; crumble prosciutto.
  3. Whisk together vinaigrette and honey in a medium bowl. Add arugula and prosciutto; toss.
