Ingredients

  • 1 sweet potato, chopped
  • ½ onion, chopped
  • 1 clove garlic, minced
  • ½ lb boneless, skinless chicken thighs
  • 2 nitrate-free Cajun style andouille smoked sausage, cut into ½-inch pieces
  • 1 (14.5-oz) can BPA-free organic fire-roasted diced tomatoes
  • 1 (14.5-oz) can low-sodium chicken broth
  • 1 (5-oz) pkg organic baby spinach

Instructions

  1. Place potatoes, onion, and garlic in a 4-quart slow cooker. Place chicken and sausage over vegetables; add tomatoes and broth.
  2. Cover and cook on LOW 6 hours. Shred chicken with 2 forks; stir in spinach before serving.
  3. Store leftover stew in an airtight container in refrigerator 3 to 4 days.
