Ingredients

  • 2 organic Roma tomatoes, seeded and chopped
  • 2 avocados, diced
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp fresh lime juice
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1½ lb grouper fillets (or use flounder)
  • 2 Tbsp olive oil

Instructions

  1. Combine tomatoes, avocados, cilantro, lime juice, garlic powder, and ½ tsp each salt and pepper.
  2. Sprinkle fish with ½ tsp each salt and pepper.
  3. Cook fish, in batches, in hot oil in a nonstick skillet 3 to 4 minutes per side or until fish flakes with a fork.
  4. Top each serving with Tomato-Avocado Topping.

Side Dish Ingredients

  • 12 oz whole wheat orzo
  • 1½ lb green beans, trimmed
  • 2 Tbsp olive oil
  • 2 green onions, chopped
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Prepare orzo according to package directions.
  2. Place green beans in a large skillet over medium-high heat; add ½ cup water. Cover and steam 5 minutes or until crisp tender; uncover.
  3. Add oil, onions, salt, and pepper; cook 3 minutes or until liquid evaporates.
