Spicy Orange-Soy Tofu

Ingredients
- 2 (14-oz) pkg organic extra-firm tofu
- ½ tsp salt
- ¾ cup fresh orange juice
- 2 Tbsp low-sodium soy sauce
- ¼ tsp crushed red pepper
- 1 Tbsp olive oil
- 2 green onions, thinly sliced
Instructions
- Place tofu on several layers of paper towels, and cover with additional paper towels; gently press out moisture.
- Cut tofu into cubes; sprinkle with salt.
- Bring orange juice, soy sauce, and crushed red pepper to a boil in a medium saucepan over high heat. Boil 4 minutes or until syrupy.
- Heat oil in a large nonstick skillet over medium-high heat. Add tofu, and cook 2 to 3 minutes per side or until golden brown.
- Add orange juice mixture, stirring to coat. Top with onions. Serve over Sesame Noodles recipe.
Side Dish Ingredients
- 1 (16-oz) pkg whole-grain spaghetti
- 1 lb snow peas, trimmed
- 2 carrots, cut into matchstick pieces
- 3 Tbsp sesame oil
- 2 Tbsp low-sodium soy sauce
- ¼ cup chopped fresh cilantro
- 1 Tbsp sesame seeds
Side Dish Instructions
- Cook pasta according to package directions; add snow peas and carrots during last 3 minutes of cooking. Drain; transfer to a bowl.
- Stir in remaining ingredients, and toss.
