Spicy Orange-Soy Tofu

Sesame Noodles with Stir-Fry Vegetables

Ingredients

  • 2 (14-oz) pkg organic extra-firm tofu
  • ½ tsp salt
  • ¾ cup fresh orange juice
  • 2 Tbsp low-sodium soy sauce
  • ¼ tsp crushed red pepper
  • 1 Tbsp olive oil
  • 2 green onions, thinly sliced

Instructions

  1. Place tofu on several layers of paper towels, and cover with additional paper towels; gently press out moisture.
  2. Cut tofu into cubes; sprinkle with salt.
  3. Bring orange juice, soy sauce, and crushed red pepper to a boil in a medium saucepan over high heat. Boil 4 minutes or until syrupy.
  4. Heat oil in a large nonstick skillet over medium-high heat. Add tofu, and cook 2 to 3 minutes per side or until golden brown.
  5. Add orange juice mixture, stirring to coat. Top with onions. Serve over Sesame Noodles recipe.

Side Dish Ingredients

  • 1 (16-oz) pkg whole-grain spaghetti
  • 1 lb snow peas, trimmed
  • 2 carrots, cut into matchstick pieces
  • 3 Tbsp sesame oil
  • 2 Tbsp low-sodium soy sauce
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp sesame seeds

Side Dish Instructions

  1. Cook pasta according to package directions; add snow peas and carrots during last 3 minutes of cooking. Drain; transfer to a bowl.
  2. Stir in remaining ingredients, and toss.
