Southwest Pasta Toss
Ingredients
- 6 oz whole-grain penne pasta
- 1 pint grape tomatoes, halved
- 1 (15-oz) can black beans, drained and rinsed
- 1 cup frozen corn kernels, thawed
- ½ cup chopped fresh cilantro
- ¼ cup lime juice
- 3 Tbsp extra virgin olive oil
- 1 Tbsp honey
- 2 cloves garlic, minced
- ½ tsp ground cumin
- ½ tsp kosher salt
Instructions
- Cook pasta according to package directions.
- Combine pasta, tomatoes, beans, corn, and cilantro in a large bowl.
- Whisk together lime juice, oil, honey, garlic, cumin, and salt; drizzle over pasta. Toss to coat.
