Ingredients

  • 6 oz whole-grain penne pasta
  • 1 pint grape tomatoes, halved
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • ½ cup chopped fresh cilantro
  • ¼ cup lime juice
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp honey
  • 2 cloves garlic, minced
  • ½ tsp ground cumin
  • ½ tsp kosher salt

Instructions

  1. Cook pasta according to package directions.
  2. Combine pasta, tomatoes, beans, corn, and cilantro in a large bowl.
  3. Whisk together lime juice, oil, honey, garlic, cumin, and salt; drizzle over pasta. Toss to coat.
