Linguine with Clams
Crispy Prosciutto Arugula Salad
Ingredients
- ½ (12-oz) pkg gluten-free linguine (or use spaghetti)
- 1 (10-oz) can wild-caught baby clams (or use 1½ [6.5-oz] cans chopped wild-caught clams)
- ½ cup white wine (or use low-sodium chicken broth)
- 1½ Tbsp chopped fresh flat-leaf parsley
- 3 Tbsp freshly grated Parmesan cheese
Instructions
- Cook pasta according to package directions.
- Meanwhile, drain clams, reserving ½ cup juice. Add reserved clam juice and wine to a large skillet. Bring to a simmer; cook 5 minutes or until reduced to ¾ cup.
- Add clams, parsley, and pasta; toss. Sprinkle with cheese.
Side Dish Ingredients
- 1 oz sliced prosciutto (about 2 slices)
- 2½ Tbsp olive oil vinaigrette
- ½ Tbsp honey
- ½ (5-oz) pkg baby arugula
Side Dish Instructions
- Arrange prosciutto on a microwave-safe plate lined with paper towels; cover with additional paper towels. Microwave at HIGH 1 minute.
- Immediately remove prosciutto from plate, discarding paper towels. Cool 1 minute; crumble prosciutto.
- Whisk together vinaigrette and honey in a medium bowl. Add arugula and prosciutto; toss.
