Double-Chocolate Skillet Brownie
Ingredients
- 1½ cups semisweet chocolate chips
- ½ cup unsalted butter
- ¾ cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp instant espresso powder
- ½ cup all-purpose flour
- ½ cup unsweetened baking cocoa
- 1 tsp baking powder
- ½ tsp salt
- Vanilla ice cream (optional)
Instructions
- Preheat oven to 350°F. Heat chocolate and butter in a large bowl set over a saucepan of simmering water until melted; remove from heat, and cool 15 minutes.
- Whisk in sugar, eggs, vanilla, and espresso until blended. Fold in flour, cocoa, baking powder, and salt, stirring until just combined. Pour batter into a large greased cast-iron skillet.
- Bake 20 to 25 minutes or until a wooden pick inserted comes out almost clean. If desired, serve with ice cream.
