Cheesy Barbecue Chicken
Buttered Green Beans and Mashed PotatoesIngredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 1 cup barbecue sauce
- 1 (8-oz) pkg shredded colby-Jack cheese
- 1 (4.5-oz) pkg crumbled bacon
Instructions
- Preheat oven to 400°F. Cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Season chicken lightly with salt and pepper. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 minutes per side or until browned.
- Transfer chicken to a parchment paper-lined rimmed baking sheet, and brush with barbecue sauce.
- Bake 10 minutes. Sprinkle chicken with cheese and bacon; bake 3 minutes longer or until cheese is melted.

- 2 (8-oz) pkg thin green beans
- 2 Tbsp butter
- 1 (32-oz) pkg refrigerated mashed potatoes
Side Dish Instructions
- Steam beans according to package directions; toss with butter until melted. Season with salt and pepper to taste.
- Heat potatoes according to package directions.
