Sausage-Gnocchi Soup

Ingredients
- 1 (16-oz) pkg ground Italian sausage
- 1 cup chopped onion
- 1 Tbsp Italian seasoning
- 3 cups water
- 1¾ cups beef broth
- 1 (14.5-oz) can diced Italian-style tomatoes, chopped
- 1 (16-oz) pkg gnocchi
- 1 cup shredded Parmesan cheese
Instructions
- Cook sausage, onion, and seasoning in a Dutch oven over medium-high heat until sausage is browned and crumbly. Add water, broth, and tomatoes; bring to a boil. Season with salt and pepper.
- Add gnocchi. Cook 5 to 6 minutes or until gnocchi are done. If desired, garnish each serving with about ¼ cup Baby Spinach Salad recipe. Serve remaining salad on the side. Sprinkle each serving with cheese.
- Chill or freeze half of soup for another meal.
Side Dish Ingredients
- 2 slices fully cooked bacon
- ½ (6-oz) pkg baby spinach
- ¼ cup balsamic vinaigrette
Side Dish Instructions
- Reheat bacon according to package directions; crumble.
- Toss spinach with vinaigrette; sprinkle with bacon. Season with salt and freshly ground pepper; toss.
