Ingredients

  • 1½ lb ground pork
  • 1 Tbsp minced garlic
  • ½ tsp salt
  • 2 Tbsp olive oil
  • ½ cup creamy peanut butter
  • ¼ cup Asian sesame ginger dressing
  • 1 head green leaf lettuce, leaves separated
  • ½ cup shredded carrots
  • ⅓ cup chopped fresh cilantro (or use flat-leaf parsley)

Instructions

  1. Cook pork, garlic, and salt in hot oil in a large skillet over medium-high heat 8 minutes or until pork is browned and crumbly; keep warm.
  2. Whisk together peanut butter and dressing, adding water or additional dressing, if needed, to reach a pourable consistency.
  3. Divide pork among lettuce leaves; drizzle with peanut sauce. Top with carrots and cilantro.

  • 1 (8-oz) pkg rice noodles
  • 1 Tbsp sesame oil
  • 1 Tbsp rice vinegar
  • 1 Tbsp low-sodium soy sauce
  • 3 green onions, thinly sliced
