Peanut-Pork Lettuce Wraps

Ingredients
- 1½ lb ground pork
- 1 Tbsp minced garlic
- ½ tsp salt
- 2 Tbsp olive oil
- ½ cup creamy peanut butter
- ¼ cup Asian sesame ginger dressing
- 1 head green leaf lettuce, leaves separated
- ½ cup shredded carrots
- ⅓ cup chopped fresh cilantro (or use flat-leaf parsley)
Instructions
- Cook pork, garlic, and salt in hot oil in a large skillet over medium-high heat 8 minutes or until pork is browned and crumbly; keep warm.
- Whisk together peanut butter and dressing, adding water or additional dressing, if needed, to reach a pourable consistency.
- Divide pork among lettuce leaves; drizzle with peanut sauce. Top with carrots and cilantro.

- 1 Tbsp low-sodium soy sauce
