Swedish Meatballs and Rice

Ingredients

  • 1 (3.5-oz) pouch boil-in-bag brown rice
  • 14 frozen fully cooked meatballs
  • 1 Tbsp butter
  • 1 Tbsp all-purpose flour
  • ⅔ cup low-sodium chicken broth
  • ⅓ cup sour cream
  • 2 tsp Worcestershire sauce
  • ⅛ tsp pepper
  • 3 Tbsp chopped fresh parsley

Instructions

  1. Cook rice and meatballs according to package directions.
  2. Meanwhile, melt butter in a skillet over medium heat. Whisk in flour; cook 2 to 3 minutes, whisking constantly. Add broth, 2 Tbsp at a time, stirring after each addition until smooth.
  3. Stir in sour cream, Worcestershire, and pepper. Add meatballs to sauce, tossing to coat. Serve mixture over rice.
