Cherry-Balsamic Chicken Thighs

Ingredients
- ½ lb boneless, skinless chicken thighs
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 tsp olive oil
- ¾ tsp minced garlic
- ⅓ cup cherry preserves
- 1 Tbsp balsamic vinegar
- ½ tsp dried crushed rosemary
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a nonstick skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet; keep warm.
- Add garlic to drippings in skillet; sauté 1 minute. Stir in preserves, vinegar, and rosemary; bring to a boil, and cook 5 minutes or until thickened.
- Add chicken to sauce; cover and cook 5 to 7 minutes longer or until chicken is done.

- 1 cup sliced mushrooms
- 1 tsp minced garlic
- 2 tsp olive oil
- ⅔ cup water
- ⅓ cup quick-cooking barley
- ½ tsp dried oregano
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook mushrooms and garlic in hot oil in a saucepan over medium-high heat 5 minutes or until tender.
- Add water, barley, oregano, salt, and pepper. Bring to a boil; cover, reduce heat, and simmer 10 minutes or until barley is tender.
