Ingredients

  • ½ lb boneless, skinless chicken thighs
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 tsp olive oil
  • ¾ tsp minced garlic
  • ⅓ cup cherry preserves
  • 1 Tbsp balsamic vinegar
  • ½ tsp dried crushed rosemary

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a nonstick skillet over medium-high heat 2 to 3 minutes per side or until browned. Remove from skillet; keep warm.
  2. Add garlic to drippings in skillet; sauté 1 minute. Stir in preserves, vinegar, and rosemary; bring to a boil, and cook 5 minutes or until thickened.
  3. Add chicken to sauce; cover and cook 5 to 7 minutes longer or until chicken is done.

  • 1 cup sliced mushrooms
  • 1 tsp minced garlic
  • 2 tsp olive oil
  • ⅔ cup water
  • ⅓ cup quick-cooking barley
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook mushrooms and garlic in hot oil in a saucepan over medium-high heat 5 minutes or until tender.
  2. Add water, barley, oregano, salt, and pepper. Bring to a boil; cover, reduce heat, and simmer 10 minutes or until barley is tender.
