Balsamic-Garlic Beef Strips

Ingredients
- 1 lb sirloin steak, thinly sliced
- ¼ tsp salt
- ¼ tsp pepper
- 1½ Tbsp vegetable oil, divided
- 2 cloves garlic, minced
- 1 bell pepper, thinly sliced
- ½ onion, thinly sliced
- ⅓ cup low-sodium beef broth
- 2 Tbsp balsamic vinegar
Instructions
- Sprinkle steak with salt and pepper. Cook steak in 1 Tbsp hot oil in a large skillet over medium-high heat 6 minutes or until browned. Add garlic; cook 1 minute. Remove beef mixture from skillet.
- Add ½ Tbsp oil, bell pepper, and onion to skillet. Cook 6 minutes, stirring occasionally, or until vegetables are tender.
- Stir in beef mixture, broth, and vinegar. Reduce heat, and simmer 5 minutes or until mixture thickens.
Side Dish Ingredients
- 3 cups chopped romaine lettuce
- ⅔ cup halved grape tomatoes
- ¼ cup blue cheese dressing
Side Dish Instructions
- Toss together all ingredients in a bowl. Season with pepper to taste.
