Ingredients

  • 1 lb sirloin steak, thinly sliced
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1½ Tbsp vegetable oil, divided
  • 2 cloves garlic, minced
  • 1 bell pepper, thinly sliced
  • ½ onion, thinly sliced
  • ⅓ cup low-sodium beef broth
  • 2 Tbsp balsamic vinegar

Instructions

  1. Sprinkle steak with salt and pepper. Cook steak in 1 Tbsp hot oil in a large skillet over medium-high heat 6 minutes or until browned. Add garlic; cook 1 minute. Remove beef mixture from skillet.
  2. Add ½ Tbsp oil, bell pepper, and onion to skillet. Cook 6 minutes, stirring occasionally, or until vegetables are tender.
  3. Stir in beef mixture, broth, and vinegar. Reduce heat, and simmer 5 minutes or until mixture thickens.

Side Dish Ingredients

  • 3 cups chopped romaine lettuce
  • ⅔ cup halved grape tomatoes
  • ¼ cup blue cheese dressing

Side Dish Instructions

  1. Toss together all ingredients in a bowl. Season with pepper to taste.
