Spanish Chicken Skillet
Green Pea RiceIngredients
- 1½ lb ground chicken (or use turkey)
- 2 cups frozen seasoning blend (diced onion, bell peppers, and celery)
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 2 Tbsp chili powder
- 1 tsp ground coriander
- ½ tsp kosher salt
- ½ tsp pepper
- ½ (28-oz) can whole San Marzano tomatoes, drained and chopped
- Chopped fresh cilantro (optional)
Instructions
- Cook chicken, seasoning blend, and garlic in hot oil in a large skillet over medium-high heat 8 minutes or until chicken is crumbly.
- Stir in chili powder, coriander, salt, and pepper; cook 1 minute. Stir in tomatoes; cook 4 minutes or until thoroughly heated. Sprinkle with cilantro, if desired.
Side Dish Ingredients
- 1½ cups long-grain brown rice
- 1 cup frozen green peas
- 1 Tbsp butter
- ½ tsp kosher salt
- ½ tsp pepper
Side Dish Instructions
- Cook rice according to package directions, adding peas during last 5 minutes of cooking. Toss with butter, salt, and pepper.
