Ingredients

  • 1½ lb ground chicken (or use turkey)
  • 2 cups frozen seasoning blend (diced onion, bell peppers, and celery)
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 Tbsp chili powder
  • 1 tsp ground coriander
  • ½ tsp kosher salt
  • ½ tsp pepper
  • ½ (28-oz) can whole San Marzano tomatoes, drained and chopped
  • Chopped fresh cilantro (optional)

Instructions

  1. Cook chicken, seasoning blend, and garlic in hot oil in a large skillet over medium-high heat 8 minutes or until chicken is crumbly.
  2. Stir in chili powder, coriander, salt, and pepper; cook 1 minute. Stir in tomatoes; cook 4 minutes or until thoroughly heated. Sprinkle with cilantro, if desired.

Side Dish Ingredients

  • 1½ cups long-grain brown rice
  • 1 cup frozen green peas
  • 1 Tbsp butter
  • ½ tsp kosher salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions, adding peas during last 5 minutes of cooking. Toss with butter, salt, and pepper.
