Penne with Shrimp and Olives

Ingredients

  • 1 (16-oz) pkg whole-grain penne pasta
  • 2 cloves garlic, minced
  • ⅛ tsp crushed red pepper
  • 2 Tbsp olive oil
  • 2 (28-oz) cans whole San Marzano tomatoes, undrained and chopped
  • ½ cup halved pitted kalamata olives
  • 1½ lb peeled and deveined, large raw shrimp
  • ¼ cup chopped fresh parsley

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook garlic and red pepper in hot oil in a large skillet over medium heat 2 minutes or until tender. Add tomatoes and olives; cook 10 minutes or until sauce is thickened. Season with salt and pepper, if desired.
  3. Stir in shrimp; cook 3 minutes or until shrimp turn pink. Toss shrimp mixture with pasta; sprinkle with parsley.
