Penne with Shrimp and Olives

Ingredients
- 1 (16-oz) pkg whole-grain penne pasta
- 2 cloves garlic, minced
- ⅛ tsp crushed red pepper
- 2 Tbsp olive oil
- 2 (28-oz) cans whole San Marzano tomatoes, undrained and chopped
- ½ cup halved pitted kalamata olives
- 1½ lb peeled and deveined, large raw shrimp
- ¼ cup chopped fresh parsley
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook garlic and red pepper in hot oil in a large skillet over medium heat 2 minutes or until tender. Add tomatoes and olives; cook 10 minutes or until sauce is thickened. Season with salt and pepper, if desired.
- Stir in shrimp; cook 3 minutes or until shrimp turn pink. Toss shrimp mixture with pasta; sprinkle with parsley.
