Tex-Mex Egg and Sausage Tacos
Ingredients
- ½ lb lean turkey breakfast sausage
- 4 large eggs, beaten
- ¼ tsp salt
- ¼ tsp pepper
- 8 corn tortillas
- ½ cup refrigerated salsa
Instructions
- Cook sausage in a nonstick skillet over medium-high heat 5 to 6 minutes or until browned, stirring to crumble. Drain; return sausage to pan.
- Whisk together eggs, salt, and pepper.
- Reduce heat to medium. Add egg mixture; cook, without stirring, until mixture begins to set on bottom.
- Draw spatula across bottom of pan to form large curds. Continue cooking until eggs are thick but still moist.
- Meanwhile, toast tortillas according to package directions.
- Spoon mixture down centers of warm tortillas; top with salsa.
