Tex-Mex Egg and Sausage Tacos

Ingredients

  • ½ lb lean turkey breakfast sausage
  • 4 large eggs, beaten
  • ¼ tsp salt
  • ¼ tsp pepper
  • 8 corn tortillas
  • ½ cup refrigerated salsa

Instructions

  1. Cook sausage in a nonstick skillet over medium-high heat 5 to 6 minutes or until browned, stirring to crumble. Drain; return sausage to pan.
  2. Whisk together eggs, salt, and pepper.
  3. Reduce heat to medium. Add egg mixture; cook, without stirring, until mixture begins to set on bottom.
  4. Draw spatula across bottom of pan to form large curds. Continue cooking until eggs are thick but still moist.
  5. Meanwhile, toast tortillas according to package directions.
  6. Spoon mixture down centers of warm tortillas; top with salsa.
