Turkey Hash

Rustic Toast, Oranges and Bacon

Ingredients

  • 1 Tbsp butter
  • 1 red bell pepper, chopped
  • 1 Tbsp minced garlic
  • 3 cups chopped cooked turkey (such as Christmas day leftovers; or use chopped rotisserie chicken)
  • 2 cups chilled leftover stuffing 
  • 1½ cups turkey gravy

Instructions

  1. Melt butter in a large nonstick skillet over medium heat. Sauté bell pepper and garlic 1 minute. Add turkey and dressing. Season lightly with salt and pepper. Cook and stir 2 to 3 minutes. Add gravy; simmer 2 to 3 minutes.
  2. Serve hash on toast.

Side Dish Ingredients

  • 1 loaf Tuscan boule, thinly sliced (or use any bakery bread)
  • 1 (2.1-oz) pkg fully cooked bacon
  • 6 clementines, peeled and sectioned

Side Dish Instructions

  1. Butter and toast 6 slices bread. Serve with hash.
  2. Reheat bacon according to package directions. Serve clementines and bacon on each plate.
