Greek Chicken Flatbreads

Ingredients
- 1 red onion, sliced
- 2 Tbsp olive oil, divided
- 1 (12-oz) jar sliced roasted red peppers, drained
- 6 herb flatbreads or naan
- 1½ cups tzatziki dip
- 3 cups shredded rotisserie chicken
- 1½ cups crumbled feta cheese
- ½ cup chopped kalamata olives
Instructions
- Preheat broiler. Cook onion in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned and tender. Add roasted peppers; cook 2 minutes or until thoroughly heated.
- Meanwhile, arrange flatbreads on a large baking sheet; brush with 1 Tbsp oil. Broil 2 minutes or until toasted.
- Spread tzatziki on flatbreads. Divide chicken, vegetables, cheese, and olives among flatbreads.
