Pecan-Grape Chicken Salad

Ingredients

  • ½ cup chopped pecans (or use walnuts)
  • 3 cups chopped rotisserie chicken 
  • ⅔ cup mayonnaise
  • 1½ tsp curry powder
  • ½ tsp salt
  • 1½ cups chopped celery
  • 1½ cups seedless red grapes, halved
  • 6 Bibb lettuce leaves

Instructions

  1. Toast nuts in a dry skillet over medium-high heat 3 to 4 minutes or until golden and fragrant.
  2. Combine nuts, chicken, mayonnaise, curry powder, and salt in a large bowl; stir in celery and grapes. Serve over lettuce.
