Hoisin-Glazed Pork Chops

Ingredients

  • 1½ lb boneless pork chops
  • 2 Tbsp vegetable oil
  • ⅓ cup hoisin sauce
  • 2 Tbsp minced garlic
  • 2 Tbsp rice vinegar
  • 2 Tbsp water
  • ¼ tsp ground ginger

Instructions

  1. Cook pork in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until done.
  2. Meanwhile, whisk together hoisin, garlic, rice vinegar, water, and ground ginger in a small saucepan. Cook over medium heat 4 minutes or until thickened, whisking occasionally. Serve sauce with pork.

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • ⅓ cup peanut butter
  • ⅓ cup low-sodium soy sauce
  • 3 Tbsp water
  • 1 (16-oz) pkg tricolor coleslaw
  • 1 red or yellow bell pepper, thinly sliced
  • 3 green onions, thinly sliced
  • ½ cup chopped roasted, salted peanuts

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Whisk together peanut butter, soy sauce, and water in a large bowl. Add coleslaw, bell pepper, green onions, and nuts; toss.
