Hoisin-Glazed Pork Chops
Brown Rice and Peanut SlawIngredients
- 1½ lb boneless pork chops
- 2 Tbsp vegetable oil
- ⅓ cup hoisin sauce
- 2 Tbsp minced garlic
- 2 Tbsp rice vinegar
- 2 Tbsp water
- ¼ tsp ground ginger
Instructions
- Cook pork in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until done.
- Meanwhile, whisk together hoisin, garlic, rice vinegar, water, and ground ginger in a small saucepan. Cook over medium heat 4 minutes or until thickened, whisking occasionally. Serve sauce with pork.

- 3 (3.5-oz) pouches boil-in-bag brown rice
- ⅓ cup peanut butter
- ⅓ cup low-sodium soy sauce
- 3 Tbsp water
- 1 (16-oz) pkg tricolor coleslaw
- 1 red or yellow bell pepper, thinly sliced
- 3 green onions, thinly sliced
- ½ cup chopped roasted, salted peanuts
Side Dish Instructions
- Cook rice according to package directions.
- Whisk together peanut butter, soy sauce, and water in a large bowl. Add coleslaw, bell pepper, green onions, and nuts; toss.
