Chicken Panang
Lime Broccoli-Cauliflower RiceIngredients
- 1 lb boneless, skinless chicken breasts, cut into strips
- ½ (10-oz) pkg sliced bell peppers and onions
- 1½ Tbsp olive oil
- 2 Tbsp red curry paste
- ½ Tbsp ginger paste
- ½ (13.5-oz) can unsweetened coconut milk
- 2 Tbsp chopped fresh basil
Instructions
- Cook chicken, onion, and bell peppers in hot oil in a skillet over medium-high heat 10 minutes or until done. Stir in curry paste, ginger paste, and coconut milk; bring to a boil.
- Reduce heat, and simmer 6 to 8 minutes or until sauce is thickened; sprinkle with basil, and serve over Lime Broccoli-Cauliflower Rice recipe.
Side Dish Ingredients
- 1 (12-oz) pkg frozen riced broccoli and cauliflower
- 1 Tbsp olive oil
- ½ Tbsp lime juice
- ½ tsp garlic salt
Side Dish Instructions
- Cook riced vegetables in hot oil in a skillet over medium heat 6 minutes or until thawed and thoroughly heated, stirring often. Stir in lime juice and garlic salt.
