Lime Broccoli-Cauliflower Rice

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • ½ (10-oz) pkg sliced bell peppers and onions
  • 1½ Tbsp olive oil
  • 2 Tbsp red curry paste
  • ½ Tbsp ginger paste
  • ½ (13.5-oz) can unsweetened coconut milk
  • 2 Tbsp chopped fresh basil

Instructions

  1. Cook chicken, onion, and bell peppers in hot oil in a skillet over medium-high heat 10 minutes or until done. Stir in curry paste, ginger paste, and coconut milk; bring to a boil.
  2. Reduce heat, and simmer 6 to 8 minutes or until sauce is thickened; sprinkle with basil, and serve over Lime Broccoli-Cauliflower Rice recipe.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen riced broccoli and cauliflower
  • 1 Tbsp olive oil
  • ½ Tbsp lime juice
  • ½ tsp garlic salt

Side Dish Instructions

  1. Cook riced vegetables in hot oil in a skillet over medium heat 6 minutes or until thawed and thoroughly heated, stirring often. Stir in lime juice and garlic salt.
