Sweet Italian Sausage with Peppers and Onions

Ingredients
- 2 lean sweet Italian turkey sausage links
- 1 Tbsp olive oil
- 1 (14-oz) pkg frozen organic fajita vegetables, thawed
- 1 clove garlic, minced
- ¾ cup BPA-free organic diced tomatoes
- ½ tsp Italian seasoning
- ⅛ tsp pepper
- ⅛ tsp salt
Instructions
- Cook sausage in hot oil in a large skillet over medium heat 6 minutes or until browned, turning occasionally; remove from heat, and keep warm.
- Add vegetables and garlic to skillet; sauté 5 minutes or until tender. Stir in tomatoes, seasoning, pepper, and salt; return sausages to skillet. Cover and simmer 8 to 10 minutes or until sausage is done.
Side Dish Ingredients
- ½ lb Brussels sprouts, ends trimmed
- ¼ cup chopped pecans
- 1 organic apple, halved and thinly sliced
- 2 Tbsp unsweetened dried cranberries
- ½ Tbsp apple cider vinegar
- ½ tsp honey
- ½ tsp Dijon mustard
- 1½ Tbsp olive oil
- 2 Tbsp crumbled feta cheese
Side Dish Instructions
- Shred Brussels sprouts. Toast nuts in a dry skillet over medium heat until fragrant.
- Combine Brussels sprouts, apple, nuts, and cranberries in a bowl.
- Whisk together vinegar, honey, mustard, and oil. Add to salad; toss. Sprinkle with cheese.
