Skillet Pork Stew

Ingredients

  • 1 pork tenderloin, cut into bite-size pieces
  • 2 Tbsp olive oil
  • 2 (12-oz) jars pork gravy (or use beef gravy)
  • ¼ cup ketchup
  • 1 (1-lb) bag steamable red baby potatoes
  • 2 cups frozen (thawed) cut green beans

Instructions

  1. Season pork generously with salt and pepper. Cook in hot oil in a large deep skillet or Dutch oven over medium-high heat 8 minutes or until browned. Add gravy and ketchup; stir until blended.
  2. Meanwhile, cook potatoes in microwave according to package directions. Drain and cut potatoes in half or quarters.
  3. Add potatoes to deep skillet. Season lightly with salt and pepper. Bring to a boil.
  4. Stir in green beans. Cover and cook 10 minutes or until vegetables are tender.
