Steak Fajita Salad

Ingredients

  • 2 lb skirt steak, cut into large pieces
  • 2 Tbsp Southwest seasoning
  • 2 Tbsp olive oil, divided
  • 2 green bell peppers, thinly sliced
  • 1 red onion, thinly sliced
  • 2 cups Ranch dressing
  • 6 Tbsp fresh salsa
  • 2 (10-oz) pkg chopped romaine lettuce
  • 3 cups shredded Cheddar cheese

Instructions

  1. Rub steak with seasoning. Cook steak in 1 Tbsp hot oil in a large skillet over medium heat 4 to 5 minutes per side or to desired doneness; remove from skillet.
  2. Cook bell peppers and onion in 1 Tbsp hot oil in same skillet over medium-high heat 5 minutes or until tender.
  3. Thinly slice steak across the grain. Season with salt and pepper.
  4. Combine dressing and salsa. Divide lettuce among plates. Top with steak, bell peppers, and onion. Sprinkle with cheese; drizzle with desired amount of dressing.
