Steak Fajita Salad
Ingredients
- 2 lb skirt steak, cut into large pieces
- 2 Tbsp Southwest seasoning
- 2 Tbsp olive oil, divided
- 2 green bell peppers, thinly sliced
- 1 red onion, thinly sliced
- 2 cups Ranch dressing
- 6 Tbsp fresh salsa
- 2 (10-oz) pkg chopped romaine lettuce
- 3 cups shredded Cheddar cheese
Instructions
- Rub steak with seasoning. Cook steak in 1 Tbsp hot oil in a large skillet over medium heat 4 to 5 minutes per side or to desired doneness; remove from skillet.
- Cook bell peppers and onion in 1 Tbsp hot oil in same skillet over medium-high heat 5 minutes or until tender.
- Thinly slice steak across the grain. Season with salt and pepper.
- Combine dressing and salsa. Divide lettuce among plates. Top with steak, bell peppers, and onion. Sprinkle with cheese; drizzle with desired amount of dressing.
