Herbed Butter Pork Tenderloin

Ingredients

  • 2 (1-lb) pork tenderloins
  • 6 Tbsp butter, melted
  • 2 Tbsp minced fresh herbs (such as rosemary, thyme, parsley, or basil)
  • 2 tsp garlic paste
  • 2 tbsp avocado oil

Instructions

  1. Preheat oven to 400°F. Season pork with desired amount of salt and pepper. Combine butter, herbs, and garlic paste in a small bowl.
  2. Cook tenderloins in hot oil in a large ovenproof skillet over medium-high heat 3 minutes or until lightly seared and browned on one side. Turn and cook 3 minutes or until other side is lightly seared. Remove from heat.
  3. Brush or drizzle half of butter mixture over tenderloins. Place skillet in oven, and bake 20 to 25 minutes or until pork is done.
  4. Let pork stand 5 minutes before slicing. Drizzle with remaining half of butter mixture.

  • ½ cup sliced almonds
  • 2 (12-oz) pkg green beans
  • 3 Tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium heat 3 to 4 minutes or until golden and fragrant.
  2. Steam green beans according to package directions until crisp-tender. Toss with oil, salt, and pepper. Sprinkle with nuts.
