Sloppy Joe-Potato Tot Casserole

Ingredients

  • 2 lb ground beef
  • 2 (16-oz) cans bold sloppy Joe sauce
  • 1 (15-oz) can corn, drained
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 1 (28-oz) pkg frozen crispy seasoned potato tots

Instructions

  1. Preheat oven to 375°F. Cook beef in a large ovenproof skillet over medium heat until browned and crumbly; drain and return to skillet.
  2. Stir in sloppy Joe sauce and corn; sprinkle with 1 cup cheese. Arrange potato tots in a single layer over cheese; sprinkle with 1 cup cheese.
  3. Bake 30 to 35 minutes or until potato tots are crisp.

  • 1 (16-oz) pkg carrots, cut into sticks
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 2 Tbsp chopped fresh rosemary (or use oregano)

Side Dish Instructions

  1. Preheat oven to 375°F. Combine all ingredients on a rimmed baking sheet; season lightly with salt and pepper. Spread in a single layer.
  2. Bake 20 to 25 minutes or until carrots are browned and tender.
